Well, actually, she made dinner on Tuesday night because of crazy scheduling...
Princess made hashbrown casserole based on a recipe in Make It Fast, Cook It Slow by Stephanie O'Dea. While she didn't add any sausage (she didn't feel comfortable browning it on her own), the results were still pretty good. She even diced the vegetables (an onion and a bell pepper) by herself, and I think she's getting more confident.
If you have someone in your house who wants to learn to cook, doing breakfast for dinner is a great way to start. It shakes up the routine a little bit for fun, and most breakfast foods are pretty simple to prepare.
